All restaurants need menus. However, vegetarian restaurants have specific concerns. Vegetarians are often keenly interested in knowing all components of a dish. Further, many people with other dietary restrictions (vegans, the lactose intolerant, raw food proponents) patronize vegetarian restaurants. As the proprietor of a vegetarian establishment, you have a responsibility to fully inform your clients of menu options.
Be specific. There's no need to list every ingredient in a dish. But it is important to list every component. Further, if a menu option is vegan, or fits any other special dietary need, draw attention to that on the menu. Use bold or italicized text or put a special character next to menu options that fit a certain profile.
Decide on a format. Listing everything on the menu isn't going to highlight anything. It may also make your customers' experience a nightmare. Decide how best to break up the menu. There's the traditional format of listing entrees, appetizers, drinks, and desserts. A vegetarian restaurant might also highlight vegan dishes, lactose-free entrees or raw food options in separate sections.
Edit with care. Make sure there are no typos, and that every menu option is listed accurately. Do not repeat words or phrases in each selection if they do not reflect specifically on the dish. Do not use chef jargon. Finally, and most importantly, make sure the descriptions of all dishes on your vegetarian menu sound appealing.
Consider your target customers. Who eats at your restaurant? Think about the size of the city, what age the people in the area are, or if there are any ethnic or religious concerns. Not all vegetarians are the same.
